3 Meals.....

We love Mexican food.....who doesn't! Well, here is a great way to get more bang for your buck and have some yummy meals. We buy the chicken fajita meat that is already seasoned at the grocery store (you can also buy the beef) and grill it out. So last night we had chicken fajitas with all the trimming....the prepackaged fajita meat will feed quite a few people, so we always have left overs. Today for lunch (using the left overs) I finely chopped the meat, peppers, onions and added a can of black beans (drain and rinse) and made chicken fajita and black bean quesadillas. Evan loved them! They were so good and I still have a little of the mixture left, I think I am going to put it in a salad with chips and have a taco salad. I was also thinking that you could buy tortilla chip and make some yummy nachos. Just thought I would share....we are not big left over people but the chicken fajita meat is too good to throw away! Let me know if you come up with any other ways..I would love to know what you did. Have a happy weekend!

Pictures

Here are a few of the pictures I was going to leave you with the last blog post. There are a few more but these are the only ones it would upload, I will work on the others later.

He knows that when the sun starts going down its getting
close to bed time and he will say, "It is 8:30 momma."

Feeling Better Today

Well I got a few more hours of sleep last night. Marti was a tired girl too! She was fast asleep at 8:30 and I was right behind her. She slept till 5:30 this morning, oh it was so nice!! Evan was up at 12:00 last night, Cory got up with him, he was thirsty. Then he had a nose bleed at 5:30....I was already up with Marti, but good old dad was right there helping out! I got about 7 hours of sleep! I am so thankful, my body was about to give out on me. I am taking Evan to the doctor next week to check up on these nose bleeds. He has had them on and off all summer. Lets see what else has been going on......working on my classroom, swim lessons, shopping for school clothes, and getting ready to redecorate a couple of rooms. I had a chance Tuesday to do one of my favorite things.......Antique Shopping! (I didn't have a ton of time between lunch and workshops, but I got some good looking in.) I am looking for a few "new" pieces of furniture and anything cool. I will leave you with a few pictures. I am sure there is something I need to be doing......or maybe not!?

NEED SLEEP

I have tons to post from the last couple of days, but I can count the hours of sleep I have had in the last two days on one hand. Marti has had a really stuffy nose and wakes up every few hours. She slept on my chest most of the night last night. It seems to be better today, I HOPE!!! I have had workshops for the last two days so no nap for me, plus Evan has swim lessons in the afternoon. So for now this is all I got! Just know we are fine, but a little tired. Hope for more sleep tonight and I am thankful I have nothing to do tomorrow!! YEA!!

So Quiet!

The kiddos have started back to school, just a few hours in the morning. We are trying to get back on our "school" schedule and routine. Monday we took all the kiddos stuff to school and made sure Marti had all her things for her little class. Evan wanted to stay Monday......he loves school!! But it was almost lunch time so I told him he would be back Tuesday. He was walking around giving hugs to all his friends, it was so cute! So Tuesday we got up and headed to school. I was a little nervous about leaving little Marti for the first time, I was that way with Evan too. She went right to the sweet lady and Evan went right into his classroom with no fuss. It could have been that yesterday was movie day and he took "Cars." They have some of the sweetest teachers and the three ladies in the baby room, lets just say you can tell they are moms and grandmas! They just love on those kids and every time I have been in that room not a baby is crying!!! So after I dropped off the kiddos.......WHAT DO I DO NOW????? I didn't want to go home because it would be so quiet there....I know your thinking go home, take a nap, and enjoy your peace and quiet. NO WAY!!! I am so used to hearing running feet, chatting, singing, crying, and giggles from my two cuties that I would go crazy just being at home. I decided to go up to school and work in my classroom. I moved stuff around, organized and cleaned! Then today after I dropped off the kids I went to Wal-Mart and found some really cute fabric for bulletin boards and curtains. And I picked up a few school supplies that I needed and headed to school. I walk into my room and all I could think was I just moved all this stuff. WHAT HAPPEN?? The cleaning crew........UGH!!!!! I thought they had already cleaned my room!!! They were suppose to have cleaned back in June! Don't they know we teachers need to get stuff done, one day is NOT enough and we have training that takes most of our time up. Lets just say I was not a happy camper!! I mean really!!! Ok- I'm over it! Speaking of training I have two next week....should be pretty good and then nothing till August. That's about all, Evan is still swimming and I have a kids leadership team meeting tonight at church. We are introducing a new curriculum to all our volunteers, should be a fun night. Sarah has already put a sneak peak of our family photos on her blog so pictures to come soon. I can't wait!!

Fun day in Lubbock

Last night Cory and I went out to eat and to the Midland Community Theater to watch "Godspell". It was awesome, the cast did a wonderful job! Aunt Amber and Uncle Chad came over to watch the kiddos. Evan wanted pizza for supper, so we had it delivered! Then we hit the town. It was a great night, just the two of us! We don't go out that often by ourselves, so it is always a special night when we do!

Plans for today are.......relax, clean, laundry, nap, Cory is going to play golf, then we are going to the mall to shop, eat something, go visit Cory's mom and probably end up at the pool later!

Tomorrow we are taking a Sunday off from church and heading to Lamesa to visit Cory's dad and then head to Lubbock to see mom. We are going to the Science Spectrum, Evan will LOVE it. Then we will grab something to eat and go to Cade's (nephew) birthday party.
